Day 21 - Rawlins, Wyoming to Kearney (car-knee), Nebraska


Today, when we awoke, I prepared an omelet and grapefruit for breakfast and then 
I decided to try a new recipe...



I'm all about figuring out what I can make in a crockpot. We had some over-ripe bananas and I wanted to try some kind of banana bread...but without the fuss.  I found website: The Lazy Slow Cooker.  What a wealth of ideas!  One was a banana bread made with a cake mix!  It was super easy and did not require many ingredients.  I chose a fudge cake mix and added dark chocolate chips.  It was yummy!  It had to cook in my crockpot for about 3.5-4 hours.  This brought us to our first pit stop.  



While fueling up, I took the bread out and put the fixings for tacos in the crockpot.  1/2 pound of browned ground beef, 1/4 chopped onion, sloppy Joe seasoning, 1 can of diced tomatoes and a little water.  Then we were off again.  


The ride today was a bit more dreary - clouds, fog, and that nasty "S" word...SNOW!  What?  I was really hoping we were done with that until next year!  Or at least Christmas!




I am still awed by the sheer endless landscape.  No wonder the thought used to be that the world was flat.  It just seems to go on forever, mostly untouched, rugged and lonely.  And we think we don't have much by us!  We passed at least 4 exits that contained signage: "No Services".  How do the people getting off there survive?  Very interesting...




We also finished the book today.  But you will have to read it for yourself to see how it ends. 


We arrived back at the Kearney RV Park (we stayed here on the way out) around 5pm.  It is as lovely as we remembered and the owners, a young couple, are very hospitable!  It was fun chatting and getting ideas for our stay here.  We will spend the night tonight and then go exploring the town tomorrow and stay one more night, although, this time we will be in a hotel and go out for a nice dinner at Rick's request.  

We enjoyed our dinner outside albeit a bit chilly.  Now it's time to rest.
